I am aware of my reputation on this board. I am going to post this anyway.

The matter at hand is why the hot stone beats the slow oven, with diagrams.

A hot stone drives the water out. A slow oven drives it in. Half this realm has been eating a wet crust and calling it supper.

Call me a clown in the replies. Then try it.

Felix said "Half this realm has been eating a wet crust and calling it supper" — At least one would think the issue is the heat distribution, not the temperature itself. A hot stone, no matter how brief its heating, would still hold its heat longer than an oven's gradual rise to a lower temperature.
