My Keep's Forest-Mushroom Stew Kept Us Talking
I simmered forest mushrooms with barley at my keep and burned the flatbread while the table argued over safe paths. The stew outlasted the bread.
Readers, how do you keep mushrooms from turning bitter? I tried a shorter simmer and more onion, but the taste still varied; I cannot tell if older caps caused it.
